Exposición Panamá-Pacific Rum is an exquisite Spanish-style molasses-derived rum, produced with precision at the San Carlos distillery located in the lush Provincia de Herrera region of Panamá. The consistently hot and humid climate of Panamá, with an average temperature of 35° C (95° F), provides the ideal conditions for aging rum, under the watchful eye of our dedicated quality control team. We commit to the age statement on each bottle of Panamá-Pacific Rum, which accurately reflects the youngest rum in the blend, ensuring authenticity and quality in every sip.
From Harvest to Distillation: A Journey of Flavor
The production of our rum begins in the heart of Panamá, within Provincia de Herrera, where sugarcane is harvested at its peak maturity from January to May. This timely harvest allows us to extract the cane's vibrant juices within twelve hours, capturing their inherent brightness and sweetness. The juice is then concentrated into a rich molasses, fermented with pineapple-derived yeasts, creating a low-alcohol mash that is subsequently distilled to perfection.
Our distillation process, influenced by traditional Cuban methods, takes place in our historic copper Coffey column still, producing a rum with a signature richness and full-bodied character. This initial distillation is followed by a three-year aging process in Kentucky bourbon casks, after which the rum is either selected for further aging or prepared for our "carta blanca" blanco expression through charcoal filtering. Rums chosen for extended maturation are transferred to previously used Tennessee and Canadian whiskey barrels, allowing for a nuanced development of vanilla, caramel, and butterscotch notes.
The 15 Year Expression: A Symphony of Aromas and Flavors
Our 15 Year expression is a testament to our dedication to quality and complexity. Beginning its journey in used American Oak bourbon whiskey casks for three years, it undergoes a 12-year maturation process in toasted Tennessee and Canadian rye whiskey casks. This careful aging fosters a harmonious balance between the rum's inherent qualities and the subtle influence of the oak.
The nose of the 15 Year expression introduces fragrant pear, evolving into rich aromas of raisin and pungent brown sugar. On the palate, luxurious black currant jam and brûlée caramel unfold, seamlessly transitioning to spice notes of ginger snaps and fresh-cracked black pepper. The experience culminates in a soft, extended finish, adorned with butterscotch candy notes, epitomizing the art of fine rum crafting.
