Exposición Panamá-Pacific Rum is a distinguished Spanish-style molasses-derived rum, meticulously produced at the San Carlos distillery in the Provincia de Herrera region of Panamá. Blessed with Panamá's perennially hot and humid climate, averaging 35° C (95° F), this setting proves ideal for the maturation of our rum, under the vigilant care of our dedicated quality control team. Our commitment to quality ensures that we bottle our rum only when it has fully matured, with the age statement on Panamá-Pacific Rum reflecting the youngest rum in the blend, embodying our dedication to integrity and transparency.
From Cane to Cask: The Journey of Our Rum
The journey of our rum begins in the heart of Panamá, within the fertile lands of Provincia de Herrera, where we harvest our sugarcane at peak maturity from January to May. Following harvest, we quickly extract the cane's vibrant, sweet juices within twelve hours, preserving their freshness. This juice is then condensed into a rich molasses, which is fermented with yeast derived from pineapples, transforming the sugars into a low-alcohol mash. This mash is then distilled in our historic copper Coffey column still at a slightly lower proof than typical, ensuring a richer, fuller flavor profile that sets our rum apart.
After distillation, the rum is aged in Kentucky bourbon casks for three years, after which it is either selected for further aging or charcoal-filtered for our "carta blanca" blanco expression. Rums chosen for extended aging are transferred to previously used Tennessee and Canadian whiskey barrels, allowing for a subtle infusion of vanilla, caramel, and butterscotch notes, enhancing the rum's complexity without overshadowing its fundamental flavors. This careful aging process continues until the rum achieves its optimal flavor profile.
Panamá-Pacific Rum 9 Year: A Symphony of Aromas and Flavors
Our Panamá-Pacific Rum 9 Year is a masterful expression, beginning its journey in used American Oak bourbon whiskey casks for three years, followed by a six-year maturation in toasted Tennessee and Canadian rye whiskey casks. This process ensures a balance between the rum’s intrinsic qualities and the nuanced characteristics introduced by the oak. The result is a rum that offers aromas of warm butter, flan caramel custard, and golden raisin, layered over spiced dried cherry and apricot. The palate transitions from sweet caramel to charred wet wood and golden raisin, with subsequent notes of coconut husk and banana leading to a long, buttery wood finish.
